Vegetarian Chili

This hearty chili is packed with flavor and is sure to satisfy even the most devoted meat-lover. To make this vegetarian chili, you will need:

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 stalks celery, chopped
  • 1 bell pepper, chopped
  • 1 jalapeno pepper, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon oregano
  • 1 28-ounce can diced tomatoes
  • 1 15-ounce can black beans, rinsed and drained
  • 1 15-ounce can kidney beans, rinsed and drained
  • 1/2 cup corn kernels
  • salt and pepper to taste

Heat the olive oil in a large pot over medium-high heat. Add the onion, garlic, celery, bell pepper, and jalapeno and cook for 8 minutes, stirring occasionally. Add the cumin, chili powder, smoked paprika, oregano, and diced tomatoes and stir to combine. Reduce the heat to low and simmer for 30 minutes. Add the black beans, kidney beans, and corn and cook for 10 minutes. Season with salt and pepper to taste. Serve hot.

Vegetarian Lasagna

This veggie lasagna is loaded with flavor and sure to please even the pickiest of meat-lovers. To make this vegetarian lasagna, you will need:

  • 1 package lasagna noodles
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 zucchini, chopped
  • 1 package frozen spinach, thawed and squeezed dry
  • 1 15-ounce container ricotta cheese
  • 1 cup grated Parmesan cheese
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes
  • 1 egg
  • 1 24-ounce jar marinara sauce
  • 1/2 cup mozzarella cheese

Preheat the oven to 350 degrees F. Cook the lasagna noodles according to package instructions. Heat the olive oil in a large skillet over medium-high heat. Add the onion, garlic, bell pepper, and zucchini and cook for 8 minutes, stirring occasionally. Add the spinach and cook for 2 minutes. In a bowl, combine the ricotta cheese, Parmesan cheese, oregano, basil, red pepper flakes, and egg. Mix until well-combined. Spread a thin layer of the marinara sauce in the bottom of a 9x13-inch baking dish. Layer the lasagna noodles, ricotta cheese mixture, and vegetables in the baking dish. Top with a layer of the marinara sauce and the mozzarella cheese. Bake for 30 minutes, or until the cheese is melted and bubbly. Serve hot.
